The History of The Azienda Agricola Rubini

Men and women united by an unconditional love for the land of Puglia, for its fertile fields and endless horizons, bear witness to a "slow journey" that has been handed down from generation to generation for decades of activity, in the footsteps of a tradition that still lives today.

Over the years, the passion and dedication of Dad Damiano have given rise to a family-run company, instilling in his children the passion to live in harmony with the land.

Today, the company, led by Vincenzo and Sabino, extends over 12 hectares distributed in the agricultural areas of the municipalities of Terlizzi and Bitonto, north of Bari, the heart of Puglian olive production. From the 2,800 native Coratina monocultivar plants, a superior quality extra virgin olive oil is produced.
For centuries, every choice and decision made by the company has had one goal: the quality and healthiness of the extra virgin olive oil produced.

As the name suggests, Monocultivar Coratina is an extra virgin olive oil obtained from 100% Coratina olives, a unique and prized olive variety that gives the oil a broader and more prestigious organoleptic profile. 

Coratina produces a fruity, intense oil with a rich and complex aroma, featuring typical notes of freshly cut grass, artichoke, and green tomatoes. 

It concludes with a harmonious bitter and unmistakable 
spicy sensation.

From the moment the olives are harvested, which takes place between October and December, to the cold extraction in a single continuous cycle mill (at 25°C), only 4 hours pass to guarantee 
the freshness of the product and the preservation of its 
organoleptic properties. 

Its very low acidity and high content of polyphenols and tocopherols have placed this oil among the top 25 in the world, 
and its quality has been repeatedly recognized by international juries, making it a multi-award-winning oil.

We do this through new olive grove plantings, which, together with over 220-year-old olive trees of the "Coratina" cultivar, constitute the pride of the company.

And it is precisely from these trees that our best extra virgin oil is born.
The "Coratina" monocultivar is characterized by a very high concentration of polyphenols, powerful natural antioxidants with certified positive biomedical effects on human health.

The favorable climatic conditions of the production area naturally support their production cycle without the use of chemical substances.

It becomes crucial, therefore, to rethink our cultivation techniques and establish a virtuous relationship between the land and human needs. 

To ensure a healthy, good, and sustainable product, we have always invested in the sustainability of our crops. 
Our integrated system stands out for the use of low-impact agricultural practices and a rational and responsible use of fertilizers. Only in this way can we share the fruits of the work of many people and continue to cultivate the symbol of an ancient and convivial culture and preserve it over time.

6 Processing Phases

Phase 1

HARVESTING

The harvesting of our olives begins, depending on the weather conditions, from mid-October and extends until mid-December. It is a crucial moment because the way they are harvested and the degree of ripeness determine the quality of the oil to ensure it is not compromised. Hand-picking is the best method, albeit costly and slow, because it ensures the perfect integrity of the fruit.

Phase 2

TRANSPORTATION AND PREPARATION

After harvesting, the olives are transported to the mill within 3 hours. Here, they are prepared for the processing phase, which involves storing them in special containers, removing the leaves, and washing them. This step is particularly important because it allows for the removal of any impurities and ensures the absolute safety of the oil that will be produced.

Phase 3

MILLING

A conveyor belt carries the olives to a hammer mill. Its function is to break the cell walls and release the juices. This forms the so-called "oil paste," a mass composed of a liquid part (oil and water) and a solid part (pits, skins, and pulp) that fills the entire mill with intense aroma.

Phase 4

GRAMOLATURA

The mixture is stirred inside steel tanks, called gramolas, with the aim of breaking the emulsion between oil and water and facilitating their separation in the subsequent phase.

Phase 5

EXTRACTION AND SEPARATION

The paste is fed into the decanter. Vegetation water, olive oil, and pomace are separated. The vegetation water and olive oil are filtered and separated into two different containers. The pomace, usually moist and greasy, is transported outside the building. Olive oil and vegetation water are further filtered and separated in the so-called "Separator," and the precious green gold is deposited into the appropriate containers.

Phase 6

FILTERING AND BOTTELING

The containers, made of 18/10 stainless steel, are placed in dark and cool rooms, away from heat and light sources, and undergo regular laboratory checks. Immediately after separation in the mill, the extra virgin olive oil is immediately filtered to remove all natural impurities and sediments, which contribute to faster oxidation of the oil. After all these precious and careful steps, the oil is bottled and shipped worldwide to the homes of our loyal customers and the kitchens of the best international chefs.
